I got to the joys of singing Filles à marier by Gilles Binchois as member of KITO Chor sometime in 1999. We sang an SATB arrangement by Egon Kraus which can be found in Europäische Madrigale III. This arrangement also provides a German text.
As to the song itself, it advises girls not marry because jealousy will strike and nobody is happy. It is possible it refers to unmarried French women in the 17th century seeking husbands in New France i.e. Canada. Whatever - it is a lovely piece to sing.
