This is a fascinating book with some very interesting traditional receipes. It is divided into five main sections - flavour, spring and summer vegetables, summer and autumn fruits, autumn and winter matters, cheese, and etceteras. Most of these are then sub-divided further. For example the 'flavour' section has a chapter on roasts, a very important part of the British cooking tradition. Many of the recipes are very old and some of them, such as gilded apples (pork meatballs) go back to medieval times. The author does not always give very precise instructions and sometimes one has to guess a little, the book is probably better for those who consider cooking to be an art rather than a science. Recipes are often prefaced with interesting comments which make this a good book to read. All in all, I would recommend this book. --This text refers to an out of print or unavailable edition of this title.
